Grrr, I gained one pound. I wasn’t surprised because I quit journaling Friday. I came home from work and the kids were starving, so I made popcorn. Sunday we cooked out, with steaks, fries, corn on the cob and garlic bread. Monday, Tay & I went to IHop and I had the multi grain pancakes. Since I already blew it for the day, naturally I had to buy ice cream. Every time I go “off” my diet, I bring home ice cream. At least this time, I bought the low fat, no sugar version, so it was better than my usual ice cream binge. Anyhow, today’s a new day; I’m going to journal religiously this week and get back on track.
So this week’s meeting we discussed the foods we stock in the freezer or fridge and the alternatives we’ve discovered to replace the old foods. A few recommendations for the group were Skinny Cow Ice Cream Sandwich Bars, Fiber One Bars, Flat Bread, Baskin Robbins Sugar Free Hard Candies and Garden Soup. I like the Quaker Rice Cakes, because they’re only 1 pt and they’re crunchy plus sweet.
Kelsey was begging me to share a couple of my recipes, but I didn’t want to speak up, so here’s one…
Chicken Tenderloins (~3 pcs), Low Fat Cheese, 2 Tbls Ranch Dressing, 1/2 cup Salsa and Whole Wheat Flat Bread or Pita. Just mix the Ranch & Salsa, and drizzle over chicken, sprinkle w/ cheese and you have a delicious wrap for 6 pts.
I don’t get why we talk about food the entire meeting. It seems counter productive. Shouldn’t we focus our attention on something other than food for a change?
